vineyards
Everything starts from nature...
and the real magic begins from our vineyards! Our passion and devotion for a conservative and environmental-conscouois viticulture are the basis of our production philosophy. We cultivate our vineyards following the organic certification regime and with a particular focus on some fundamental techniques for supporting a more sustainable environmental approach, such as the green manure, or the use of beneficial insects for enhacing biodyversity, as well as the use of solar panels for the cellar energy supply. Our wines are developed with care and gentleness from the highest quality grapes we select from our best sites.
Low-intervention production
gives us the most satisfaction and the finest results. This allows us to mantain and express in the wine the natural characteristics of the grape varities as well as the territiory where we produce them.
All our wines are spontanously fermented in stainless steel tanks and they are then removed from alcohol through a gentle technique that allows the wines to preserve their color, structure and aromatics. It is for this reason that we don't need to add to our wines any artificial colors or aromas.
Winemaking
0% ALCOHOL 100% FLAVOUR
Cølibrì Spumante is made with 100% Glera grapes, an indigenous italian variety used for the production of the worldwide famous Prosecco. The grapes ripen quite late, nevethless they manatin a good acidity level that brings freshness into the wine. The aromatic profile of the variety consists in persistent floral and fruity scents, that goes from green apple to citrus notes.
Cølibrì Spumante rosé is made with Glera and Merlot grapes, with the beautiful pink color obtained by four hours maceration. The wine mantains extreme freshness thanks to Glera grapes and a more complex texture given by the Merlot and the skin contact. Red fruit, citrus and and floral notes, such as rose petal and hibiscus, are few of the aromas you can find in our wine.
